I haven't added a new blog post to Fion's Cookbook series for quite some time. In retrospect, that "some time" means a few years! My usual diet just consists of a lot of lean protein, fruits and vegetables, so I don't think there's much to blog about.
I love cooking pasta dishes. I don't know why but I just really like them. A few years ago, I shared my simple carbonara recipe but today I'm writing about cooking Aglio Olio pasta in a very lazy manner. That being said though, I promise that it still tastes Good - with a capital G!

Usually when Chernie (my housemate) was around, I wouldn't need to do much during our baking sessions because she's much better at that than I was. I was only interested in doing the colourings or being in charge of the sprinkles.
It wasn't until last year when I in Melbourne alone (Chernie went home for summer) and I had to prepare something for a potluck party until I started to figure out how to bake on my own.
After a few failures, now I can proudly say that I am pretty good with baking COOKIES. Just cookies for now but I believe I will be more specialise in other things as time goes by :D
MATCHA COOKIES
This was my very first single handed attempt in baking.
I'm not that much of a sweet tooth so I opted for matcha cookies instead of the conventional chocolate chip cookies as it's a safe choice.
Here's the recipe~
Ingredients:
- 1/2 cup softened unsalted butter
- 4 teaspoons of matcha powder (Personally, I used green tea latte powder instead of pure matcha powder))
- 2/3 cup of white sugar (whisk longer if you opted for raw sugar)
- 1 teaspoon of vanilla extract
- 1 egg
- 1.5 cup of plain flour
- 1/2 teaspoon of baking soda
- 1/4 teaspoon of salt
This is the green tea latte powder that I used.
If you are not particularly anal about the RIGHT procedures in baking or the RIGHT recipe, getting green tea latte powder is actually a pretty good choice. Since they usually come in a box of a few sachets, after using 1 for baking, you get to drink the rest of them. That kills 2 birds in 1 stone ><
Steps:
1) Preheat oven to 160 degree celsius
2) Mix butter and matcha powder until smooth
3) Add in sugar and continue mixing until smooth
4) Add in vanilla extract and egg and mix till just combined
5) Mix the dry ingredients (white sugar, flour, baking soda, salt) together
6) Add the mixture of dry ingredients to the wet ingredients (i.e mixing step 5 into step 4)
7) Put a few drops of green colouring (optional)
8) Roll the dough into rounded balls of your desire size
9) Place the balls onto an ungreased cookie sheet / baking paper on an oven tray and make sure to space them apart sufficiently
10) Bake for approximately 9 minutes (for medium-sized cookies) or until the edges of the cookie start to turn brown. The bigger your cookie dough ball, the longer the baking time (vice versa)
11) Let cool and EAT!

I have always loved my #BADInfluence Erica's homemade carbonara spaghetti. However, both Chernie (my housemate - I nicknamed her!) and I had never gotten around to try making it from scratch. We always ended up buying the ready-made carbonara sauce from the groceries and that's the end of the story.
When I saw one of my friends shared a homemade carbonara recipe on Facebook, I told Chernie we should try it out. Unfortunately, that night, she was caught up in school by her tutor till very late and I was already starving. Hence, I got up and started making it myself ^^ As expected...I constantly replayed the tutorial video!!!
Here's the outcome!!!!! Couldn't believe I can actually make pasta from scratch!

PS: I didn't have pancetta at home, so I made use of the bacon that I had readily in the fridge instead.
Surprisingly this dish's super easy to make. If someone like me could succeed during the first time, then it's definitely not a problem to any one of you!!!!

Today is a food tutorial. HAHA Ever since I gave up on my food blog several years ago, I had never thought of doing a blogpost about a food tutorial - in other words, a recipe! :p
I called this the FRUIT SALAD BAGUETTE!
Peel the potato skin off > Cut it into pieces > Boil them till they are soft
Then cut them into equal sizes (obviously I failed - Fion has bad estimation)
Dig out the centre of the baguette BUT don't make it hollow. Remember to not dig all the way through - leave a base that is thick enough to carry the weight of the ingredients that we are about to put into it!
When the corn is cooked, mix it with the fruit salad (which shouldn't contain the syrup anymore)
Pour everything into the fruit salad & corn mixture - basically all the ingredients are chucked into one big bowl (apart from the baguette and cabbage leaves)
Then mix all of them together!!! (Don't do any further mashing - just MIX them)
You MAY need to add more mayo depending on your own preference
The mixture may look a bit gross at this point of time - but it will taste good, I promise
Now all we have to do is to fill up the baguette pieces with this mixture!
Then top each of them off with a piece of cabbage leaf!
You can't simply ignore the importance of food presentation :p (Just like how you need to get your eyebrows done when you are doing a full face makeup)
Anyway, this is a super simple and cute snack that you can definitely make without going through too much fuss. Most important of all, it's absolutely instagram-worthy! HAHA

Disclaimer: I learnt this recipe around 6 or 7 years ago from a Taiwanese blogger but I can't find her blog to her original link here. Just so you know that I have modified the recipe a little to match my own liking though it's obviously a nice way to say I'm effing lazy like this.

Not only it's easy to make, it looks cute too! Apart from having mayonnaise as one of the ingredients, I would say this thing is pretty healthy because it contains vegetable and fruits and eggs! :D
Now let's get into the ingredients:
(i) Baguette / French Loaf - I used a baguette because french loaves were all sold out when I went to the grocery T_T
(ii) Fruit Salad - cut your own favourite fruits if you wish
(iii) Mayonnaise
(iv) Hard boiled eggs & Potato
(v) Few leaves of cabbage & Corn
Get everything ready and now we can start preparing WHEE! The fun starts here:
Heat up the corn (I used a steamer here but you can boil it too)

Pour out some fruit salad & wash it with water to get rid of the sweetness of its syrup
Get rid of BOTH ends of the baguette
Then cut them into equal sizes (obviously I failed - Fion has bad estimation)

When the potato slices got soft after being cooked, mix them with the hard boiled eggs (of course you boil the eggs beforehand and remove the shell of the eggs, duh!)
Add in mayonnaise to the potato slices and eggs
Mash them into small pieces
You shall have a well mashed mixture of mayo, egg and potato when you're done
Pour everything into the fruit salad & corn mixture - basically all the ingredients are chucked into one big bowl (apart from the baguette and cabbage leaves)
Then mix all of them together!!! (Don't do any further mashing - just MIX them)
You MAY need to add more mayo depending on your own preference
